We continue our series of Remote Fermentation Workshops.

Join us via Zoom to learn about types of fermentation and explore in-depth lacto-fermentation.  We will chat about different fermented foods from around the world, how to incorporate them in your diet and what potential health benefits they bring with regular consumption.

Jelena will demonstrate how to make hot sauce and carrot kimchi aka TANGGUN (without cabbage) and it would be great if you could join her making it at the same time.

Don’t worry about sourcing ingredients, we will have enough time to talk about how you can turn anything you have in the fridge into a tasty ferment using two methods for lacto-fermentation. But if you are able to source these ingredients, this is what Jelena will be using:
3 red peppers
1 garlic bulb
a few chillies
3-4 carrots
1 bunch of spring onions (or leeks/wild garlic/three-cornered leeks)
root ginger
Gochugaru (search internet shops or Asian markets if you have one close by you shop at regularly; don’t worry if you don’t find it, we can make white kimchi)
sea salt

Equipment you will need:

A good knife
A grater
A chopping board
Two big bowls
4 clean jars 330ml or bigger

Jelena has run very popular Fermentation workshops for adults and for children at the Greenhouses since 2019.  Jelena trained with the world-renowned macrobiotic counsellor Simon Brown between 2009 and 2011. After 12 years in news and current affairs, Jelena left her job at the BBC to pursue her passion for food full time.  Jelena has in recent years led numerous macrobiotic and wholefood cooking and fermentation workshops, published nutritious recipes in the Serbian magazine Sensa, worked with private clients and wrote a bi-lingual blog for a while, focusing on healthier food choices for the whole family.
